Now I may be wrong but that looks less like a grapple and more a bite attack.

And speaking as someone who’s DM loves to send big things at that eat my character on the regular I can tell the difference. It got so common I specifically got Acid resistance.

Sure it applies the grappled condition but it’s not a grapple by itself

Is the dragon supposed to grapple with its opposable thumbs? Mouths are probably the next best thing.
Also as far as we've seen the dragon is just a head and neck so maybe it's also some kind of fancy demilich and nobody remembered to mention it.
Or maybe the author decided that drawing a whole properly sized dragon was silly when you couldn't see anything else in the comic that way.

Some bite attacks have the grab special quality that grants a free grapple attempt.

Any time you can use dimensional dervish is a good time.
Speaking of which... did you know drunken master monks can use dimensional dervish every round forever? Full melee attacks where you start and end your turn 80 feet away from someone leads to fun times.
